African dishes: Beef bones stew

Beef bones are popular in southern Africa, and often considered a delicacy. Although they may take a fair amout of time to prepare and cook – the end result is worth it! Try our simple recipe.

Beef bones stew recipe

Ingredients

1kg neef bones

1 cube beef stock

1 chopped onion

4 chopped tomatoes

Salt and pepper

Chopped chilies (optional)

Water

Method

Clean your bones well before you cook with them. In a sauce pan, add the beef stock and one litre of water, allow to simmer for 5 minutes, then add your bones. Cover your sauce pan and turn the heat down to medium. Cook the bones for 2 hours, constantly checking on them and adding more water if required. After 2 hours add the onions and tomatoes and a pinch of salt and pepper for seasoning. At this stage you can add your chilies. Cook for another 3 hours on a low heat until the bones are nice and soft.

You can serve this stew with mealie pap/ sadza or steamed bread/ ndombolo.
