African dishes: Kapenta stew

Kapenta is the Zambian name given to the Tanganyika sardine found in the Zambezi and other rivers of Zambia. It is also known as Matemba in Zimbabwe. Why not try our simple, quick-to-prepare recipe for dinner (quantities of ingredients will vary depending on the serving size).

Ingredients

Chopped onion
Olive oil
Chopped tomatoes
Dried kapenta, washed and soaked in water for an hour

Method

Sauté the onion in oil until it starts to brown. Add the tomatoes and sauté for another few minutes. Add dried kapenta and cook for five to seven minutes over medium heat.

Serving suggestion: Nshima (a dish made from maize flour).
