African recipe: Dombolo (steamed bread)

If you enjoyed our tripe recipe last week, then this recipe is just for you. Dombolo (or steamed bread) is a side dish that is commonly used when serving tripe. Also a South African recipe, this bread will have you reevaluating how you eat your tripe.

Ingredients

250 ml warm water

2.50 kg  all purpose flour

250 ml sugar

2 ml salt

1 sachet dry yeast

Method

Mix all the dry ingredients with 250ml warm water. Kneed for 15 mins and allow to rest for 2 hours in a warm place. The dough should double in size after resting, and ready for preparation.

Knock the air out of the bread by punching the dough with your fist. Divide the dough into sizes of your prefer.

Place the dough in a steamer on top of a pot of water, making sure it’s covered. Steam for 30 minutes, depending on the size of each bread, or until a tooth pick comes out clean.
