African recipe: Maheu/Mageu

uMaheu/mageu is a popular traditional non-alcoholic African beverage. It is very nutritious and originates in Southern Africa.

Ingredients

  • Maize meal.
  • Wheat flour or malt/sorghum.
  • Sugar  (for taste).

Method

Start of by making your maize meal, once it has boiled and the maize has cooked for a while, allow it it cool down and then add wheat flour/sorghum. Make sure it is not too think, rather a pour-able consistency. Stir the ingredients together and seal the mixture in airtight container. Leave to ferment for more that three days (the longer it takes the mixture to ferment, the better it tastes). Make sure you do not skip this stage because it is the most important one. Traditionally, the mixture is left to ferment in a clay pot.

Once done, add sugar to taste, and serve chilled.
