African recipe: Nhopi/ Mashed pumpkin and peanut butter

Since its all things pumpkin in the United States, here is a recipe that will have you feeling like you are part of the Thanksgiving celebrations.

Nhopi, a Zimbabwean recipe, is simply mashed pumpkin with peanut butter. It’s so simple, all you need do is add cooked pumpkin and peanut butter!

However, Makamba Online has pulled out a more refined recipe. Some traditionalists may question its modern take, but it still tastes the same and does not take away from the traditional recipe.

Ingredients

Washed, pealed and chopped pumpkin

Peanut butter

Method

Place the washed and peeled pumpkin into a casserole dish and bake in a 190 degrees Celsius oven for 40 minutes. Once the pumpkin is nice and soft, take it out of the oven and to that add your peanut butter and mash together until smooth. Serve and enjoy.

If you want to make it even more exciting you can use your nhopi to make a pumpkin pie, seeing as we are feeling the Thanksgiving fever.
