African recipe: Malawian Mbatata biscuits (Sweet potato biscuits)

These super-tender, biscuits are sweet, so they go equally well with the sweet dishes of the holiday meal. The recipe originated in Malawi. However, this recipe makes large biscuits; feel free to cut them smaller.

 

Ingredients

  • 180 grams’ mashed sweet potato.
  • 60 millilitres milk.
  • 4 tablespoons melted butter.
  • 250 grams’ sifted flour.
  • 2 teaspoons baking powder.
  • 4 tablespoons sugar.
  • ½ teaspoon salt.
  • ¼ teaspoon cinnamon.

 

Method

Mix together the sweet potato, milk and melted butter. Blend well then add all the remaining ingredients. Bring together to form a dough then tip onto a floured surface, knead and roll out until it’s just over 1 cm thick.

Cut with a pastry cutter then place a well-greased baking tray. Place in an oven pre-heated to 160®C and bake for 35 minutes or until golden. Remove from the oven, dust with icing sugar and set aside to dry.
