You will love the blend of avocado with pineapple. This African recipe originates from Zambia.
- 500 grams’ crushed, tinned, pineapple.
- 100 grams’ brown sugar.
- 2 tablespoons mustard.
- 1 teaspoon ground cloves.
- 5 kilogrammes gammon steaks.
- 2 ripe avocados, peeled and stored.
Combine the pineapple, brown sugar, mustard and cloves. Lay trhe ham steaks on a baking tray and spread the pineapple mixture over the steaks. Place in an oven pre-heated to 170 degrees celcius and bake for 20 minutes.
Cut the avocados into 1 cm slices the lift the gammon steaks onto the dinner plates and arrange some 4 or 5 slices of avocado on each gammon steak. Serve with sweet potatoes baked in jackets.
