This recipe originates from Zambia. Isidudu is a pap dish made to simmer with pumpkin, curried cabbage and liver. An alternative recipe for stewed potatoes also exists. Served with milk or amazi.
- 700 grams’ cooked pumpkin
- 1 litre water
- 550 grams’ corn (maize) meal
- 60 grams’ sugar
- 1 teaspoon salt
Bring the water to a boil on a pan then add the sugar, salt and pumpkin, stirring to mix. Once the mixture is back to a boil add the maize meal slowly, stirring all the while. Reduce to simmer and cook for 30 minutes, stirring occasionally.
Use the isidudu as a base for stews and sauces.
